Last May, Sanderling Resort acquired our chef’s favorite toy- a monstrous smoker complete with grill and deep fryer. The 5 tier smoker infuses flavor from a blend of hickory and pecan wood into all the savory morsels we put in it, and can be used in combination with the other parts of the machine. Our chef will put just about anything on it- whole pigs, beer can chickens, BBQ ribs and all kinds of veggies.
If you’re looking for more of a seafood based meal, the oversized burners give way to huge pots for shrimp and lobster boils. Throw out your newspaper and get cracking on some of these guys like a recent wedding of ours did! This couple decided to pull the smoker right up to the wedding’s reception and had a seafood bake fit for Sanderling, complete with roasted oysters and veggies, shrimp boil, steamed blue crab and lobsters, and all the herbed goat cheese hushpuppies you could eat- WOW!

ALERT THE PRESS- I weaseled my way into getting Sanderling’s Secret BBQ sauce that we use for all of our smoky treats. North Carolina is known as the “Cradle of ‘Cue” for a reason- this vinegar based concoction is finger-licking good! Slather it on all your favorite barbequed bites and enjoy!
Sanderling’s Secret BBQ Sauce Recipe (Yields 8 cups)
4 cups Apple Cider Vinegar
1 cup Brown Sugar
1/4 cup Tabasco
1/4 cup Red Chili Flakes
2 cups Ketchup
1/2 cup Creole Mustard
1/2 cup Worcestershire Sauce
1/8 cup ground black pepper
