Executive Chef, Brian Riddle

Chef Brian Riddle is the latest and greatest addition to our exquisite culinary team! Chef Riddle spent the last 33 years refining his culinary skills in high-volume 4 and 5 star properties, such as The Galt House Hotel and Suites in Louisville, Kentucky. His motto of “Keep it fresh, keep it local, keep it simple” is the spotlight of our new menus at Kimball’s Kitchen and Lifesaving Station.

Chef Riddle is excited to embrace the S.O.A.L. cuisine style and make sure it shows through in every dish around the resort from the Sandbar to Kimball’s Kitchen. S.O.A.L. cuisine is a healthy and fresh representation of the area and it’s sustainability. We pride ourselves on wholesome, locally grown and caught natural food- which is exactly what Chef Riddle is all about.

Whether you are out to breakfast, lunch, or dinner at one of our restaurants on property, you are sure to see Chef Riddle out talking to guests. He can tell you everything from where the seafood came from, to the captain of the boat that caught it that day. One of his favorite parts of his job is to be out on the floor chatting with guests each and every day.
